The last minute thingy...

Initially these were supposed to be plain chocolate moist cupcakes.  After they were packed, I got a call late last night asking if I could do an Anchor themed cuppies.

Hence, I came out with these...no buttercream toppings as everyone in the Cheer Leader's group is on diet!. 

Delivered to the school in wee-hour in the morning..!

Thanks Lai Hong for the order and Aunty hopes everyone enjoyed the cuppies.

Princesses Cupcakes...

Its every little girl loves and dreams of being a princess. 
I know I am..! ...and still am!
And there's no other princesses that we all adore unless they are from disneyland...!
Ella...
Belle...
Ariel...
Jasmine...
Aurora...
Snow White...
 ...you name it....!
  
So how do you translate that into cupcakes? 

  That is just what Pink Princesses cuppies I made for a beautiful birthday girl.
I hope it makes her feel like a princess.

Vanila Cupcakes with Buttercream Frosting...

This is the most easiest and fun vanila cupcake recipe.
  I have used it many times and it is really easy to make, with this recipe you can do anything with cupcakes.  Eat them plain or get the kids to decorate them with coloured icing and some sprinkles or sweets.

Sharing the recipe:

Ingredients:

  • 125g unsalted butter, softened
  • 1 cup caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 1 teaspoon baking powder
  • ¾ cup Fresh Milk (room temperature)

Buttecream Icing:
  • 50g unsalted butter
  • 2 cups icing sugar (sifted)
  • 2 tablespoons milk
  • Sprinkles  to decorate (optional)

Method:

Preheat oven to 180°C.
Place cupcakes papers in cupcake trays.
In an electric mixer, beat butter for 2 minutes until pale in colour and creamy.
Add sugar one third at a time, beating well between each addition.
Add the eggs one at a time, beating for about a minute between each addition.
Add the vanilla essence and beat until combined.
Sift flour and baking powder and add half to butter mixture with half the milk, mix until well combined. Repeat with remaining flour and milk.
Fill cupcake papers ¾ full (an icecream scoop is perfect for this).
 Bake muffin size cupcakes for 20-25 minutes and small cupcakes for about 15 minutes or until a skewer inserted into the middle of a cupcake comes out clean.
Transfer to wire racks and allow to cool completely.

Buttercream Icing:

Cream butter until pale and smooth. Add the milk and half the sifted icing sugar.
Beat until well combined.
Add the remaining icing sugar and beat until mixture is light and fluffy.
The mixture should be a spreadable paste; if it is too dry add some more milk, if too wet add more icing sugar.   When cakes are cold, spread generously with icing and dip into sprinkles.

Angry Birds...

*SQUAWK!*
*grunt grunt grunt hurhurhur grunt
*“DAMMIT!”

Sounds that reverberate around lounge rooms, bedrooms and through the earplugs attached to countless iPhones, androids and smartphones throughout the world.

The cause? Angry Birds.

Started from iphone game, I apply to cupcakes that everybody love it......

The mom of 10 year old girl, Farhana,  had commissioned me to do an Angry Birds themed cucpakes for her daughter.

Yes, why not huh? It's not necessary to ask for a barbie doll topper, ever popular Mickey or Minnie, Winnie The Pooh or other famous cartoons themed cupcakes.

We can always introduce  the latest trend via a birthday cupcakes.

When two birthdays fall in the same month it makes a lot of sense to think about throwing a joint birthday party.  And the theme  for the daddy.... yes, your guest is right... GOLF...!
