Frozen Shoulder NOT Frozen Lamb...!

So, I had my orthopedic doctor’s appointment yesterday at Gleneagles on the road to doing something with this gnarly shoulder pain of mine. What should I expect at this time from this suave and sophisticated and totally personable & humourous Doctor of mine..????
Doctor: Hey Nita, lama you tak datang jumpa I. How long has it been - 3 years? whats wrong with you now...?

Me: You know me Dato', I only come and see you when my limbs are falling apart.. (LoL)

Doctor: Is that right shoulder giving you problem again?

Me: No, but its the other one ...there was decreased motion of my shoulder, stiffness and extremely painful.

Doctor: Pulak dah... (so he checked my left shoulder... ) - Ni Frozen Shoulder..!
You see ...the joint capsule of the shoulder joint has ligaments that hold your shoulder bones to each other. And when the capsule becomes inflamed, the shoulder bones are unable to move freely in the joint. That is why you are in so much pain....& you know that you need to go for Surgery..

Me: Surgery...??? Oh no, not again..!

Oh my... Apple Pie...!

My apple pie evolved after years of baking 'not quite good enough' apple pies. I had tried all combinations, cooking apples, eating apples, half and half of each, shortcrust pastry, sweet shortcrust pastry, crumble topping on a pie base, although all the pies were edible they weren't delicious. Eventually I stumbled across a Jamie Oliver recipe which gave me hope, after a bit of tinkering I made a so-called 'perfect apple pie'.... (clap, clap, clap..)
This pie is, for me, the perfect combination, not too tart, not too sweet due to a mixture of half cooking and half eating apples cooked till just soft in a little bit of water with cinnamon and brown sugar added, once cooked set aside to cool completely.

The pastry, a rich, crumbly, sweet shortcrust bound with egg yolks rather than water and sweetened with icing sugar, although a pain to roll out, wonderful against the natural tartness of the apples. The egg yolks add a richness to the pastry which is short but a little cakey too.
A bit of egg-wash on top and dusted with cinnamon before a slow bake in the oven...perfection...!
Forget about that nice ribboney-lattice-top, am to lazy to take out my ribbon cutting tools, so I just use the ordinary knife and cut the pastry dough into long strips, then weave them together in a criss-cross pattern to creaty that lattice effect. Hmmm..., that will do..
Warning: Your house is fixing to smell pretty good!
Forget about those scented candles, you've got the real thing!
I find that there are two things that make apple pie the best....
First, it has a delicious, homemade crust. Next is its delicious filling.
For me apple pie must be eaten with very good quality vanilla ice cream although in desperate times double cream or custard will suffice. Unfortunately, neither one of those were in the fridge...! (sigh...)

Mickey & Minnie Mouse Cupcakes

These were done for a friend's grand-daughter.... and...

...were inspired by some great Minni Mouse cakes and cupcakes I have seen in internet...

These cupcakes are moist chocolate with vanilla buttercream icing and topped with fondant. Simple yet tasty.
Speaking of which, I love old Disney cartoons.
So intelligent, devoid of emotional talk, such a deep guy narrating it, such humour.
Those were the days!
Did you know all that separates Minnie from Mickey is a bow and lashes?

Hydrangea Birthday Cake...

Birthday cake ordered by my repeat customer, for her daughter's 16th birthday.
She asked for something 'pastel' in colour. So, I made this cake after being inspired by all of the beautiful hydrangea bushes in full bloom in my garden..... and she loves it...!

Vanilla cake with frosted and filled with vanilla buttercream.

Hydrangea Cupcakes...

My Doctor advised me to take a good long proper and quality rest before continuing with my 'baking activities', well what do you know.... I am just as 'degil' as my daughter...!

Anyway, the hydrangea bushes are in full bloom in my garden right now... which gave me an inspiration to bake...!
I love all varieties of hydrangeas, but my favorite is this traditional shaped, blue-purple color. I picked a few this weekend and brought them inside as inspiration for my cupcakes.
I've seen cupcakes that resembled hydrangea flowers before, but I've never given it a try. It was much easier than I'd imagined and I was very happy with the results!

The Malay called it 'Bunga Kembang 3-Bulan" because it will blooms for three months...

Hydrangea Cupcakes

I made a batch of my favorite chocolate cupcakes and my vanilla cream cheese frosting. Then I colored half of the frosting blue, and half purple (mixing a few shades of blues and purples to get a good color match to the real hydrangeas). You need the frosting to be pretty stiff to hold a nice shape.
If you'd like to match other hydrangeas, you could certainly use other color options, like light blue and medium blue, or two shades of pink.
Now I want to plan a pretty tea party just so I can make these again!

Chilli Con Carne...

Everyone has their favorite chili recipe.

This one is mine...

The main ingredients...

Ingredients:
1 can kidney beans- drained
1 tablespoon vegetable oil
1 large onion - diced
1 red bell pepper - diced
1 tube minced beef (about 500gm)
1 can tomato puree
2 cloves garlic - diced
2 ripe tomatoes - diced (optional)
1 tablespoon chili powder (add more if you desire more heat.!)
1 1/2 teaspoons salt
dash ground pepper & sugar
2 cubes of Maggi chicken cube
- (make it into 2 cups of chicken stock)
Method:
Brown minced beef in a pot .
Working in batches so that you don't crowd the beef (crowding will steam cook the meat instead of browning it), lightly salting as you cook the beef.
Add onion and garlic - saute until soft about 5 minutes.
Add red pepper and cook until fragant, add chilli powder and thyme.
Meanwhile, dilute the chicken cubes with warm water - make it into 2 cups of chicken stock.
Add in the kidney beans to the beef mixture and stir.
Pour in the chicken stock & gently mix in the tomato puree to thicken it.
Add diced tomatoes (if using).
Heat the chili on medium high heat until it comes to a simmer. Then reduce the heat to low.
Cover and cook for 1/2 hour. Then uncover and cook for another ten minutes, keeping the temperature at a place where you can maintain a simmer.
Adjust salt and seasonings.
Depending on the acidity of the tomatoes, you may need a little more sugar to bring the stew to balance. At this point you can also add a little more chili powder if you desire more heat.

Serve with white rice or if you have -tortilla chips.

Banish those grumpy grey clouds - bake cupcakes...!

Yes! it's raining again - I know I shouldn't complain, after all it does seem to happen rather a lot off late! It was the perfect excuse to bake a little sunshine into my life. Not that I ever need an excuse to bake cupcakes anyway, since I love them in all their enticing incarnations...These ones, I decided, would be lovely-chocolatey-orangey and moist, with a swirl of fluffy pink & white vanilla icing.

Moist-Chocolate-Orange-Zest Cupcakes to banish away those grumpy grey clouds, inspired by the flowers bravely standing sentinel against the assault of the rain in my garden.


So, off I went with flour, sugar, eggs, orange, chocolate and butter - all 'thrown' into my mixer, to be transformed twenty minutes later into gorgeous batter. Isn't it amazing how a bowl full of apparently unrelated looking creamy goo can manifest into something so wonderfully and completely different, all springy and golden. It's like magic!!
