Cake of the day...

Gathered my act together and gave my aptness another shot..!
Here's presenting ... Cake of the Day - Fruit Cake

Ingredients:
1 can of pineapple - diced (doesnt matter if it is ring or cube- you need to diced/chopped it anyway)
3/4 cup brown sugar
3 cups mixed fruit (or you can use: 2 cups black sultanas + 1 cup raisins)
3 tbsp honey
125 gm butter (diced)
A pinch of salt
1/2 tsp cinnamon powder
1/2 tsp mixed spice
1 tsp bicarbonate soda
2 eggs
1 cup all purpose flour )sift together
1 cup self-rising flour )
1/2 cup chopped walnut (I like it whole)

Method:
1) Place the canned pineapple together with the syrup in a pot, add brown sugar + honey + butter + mixed fruits (or raisins/sultanas). Boil for 10-15 mins (low heat) , until the mixture has slightly tickened.
2) Remove from heat, add bicarbonate soda (it will starts foaming once you add the bicarbonate soda). Put aside and allow it to cool completely.

3) Lightly beat the egg then add the fruit mixed mixture. 4) Add the two types of flour (all purpose & self-rising), mix well... ....and then add the walnuts.

5) Pour mixture in a greased loaf pan or 7" round cake tin. Bake in the preheated oven for an hour (170C/340F), or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Note: This fruit cake tastes better after two days
